White Yam & Cavendish Banana Cupcakes!

Depending on the quantity of yam used, the notes of this flour in the overall cupcakes vary from very subtle to full fledged. In addition, this recipe was inspired by the West African Plantain Banana-Yam Foutou (Fufu) normally eaten with a stew during a main course. Try it and tell us what you think.

Yield : 11 - 12 muffins


- 2 to 3 ripe Cavendish bananas

- 1 egg

- 1/2 to 1 cup of white cassava flour or cocoyam flour

- 1 to 1/2 cup of wheat flour

- 1 teaspoon of baking powder

- 1/2 a teaspoon of salt

- 1/2 stick of butter

- 1 cup of sugar

- No high fructose creamy home-style classic vanilla frosting (for garnish)


- Mix all the dry ingredients

- Mash the bananas

- Add the egg, butter and sugar

- Mix them well

- Now, add the mixture to the dry ingredients and stir well again

- Lightly grease a muffin pan and divide the batter in the molds

- Bake at 300 F for 20 to 25 mins

- Garnish with the frosting and enjoy! :)
